Game hangs for minutes at random times

I'm running a
i7-6700K CPU, 16 GB Ram, and a GTX 2080Ti
When I'm playing the game will occasionally (every 5 minutes or so) hang for up to a couple minutes. It's really frustrating. I don't see anything obvious in the logs. I've tried lowering settings but nothing seems to help.
This happens regardless of what I'm doing in game. I could be building, mining, walking, etc

It definitely seems to happen when GC'ing ~1.2GB of memory. Seems awfully high :)

The problem seems plenty serious. I'm not the only person who has posted this issue and it makes the game unplayable.
