Have logged back on xbox several times where holes I have dug were not there anymore and resources respawned again I believe.

Happy to hear that.
When there is a memory pressure, the changes to the voxels (planets / asteroids) may get dropped to prevent a game crash.
In Beta, the memory system is much improved, likely having less pressure.
