Playing on Xbox series x in survival mode. Built large ship near an asteroid base. System considers it a station, info screen doesn't show the option to convert to a ship grid. Built it floating in space connected to nearby asteroid station via a connector & two light armor connection points, didn't use a landing gear. Tried removing all connections to base & nearby bits of asteroid to no avail. Looking at my other ships & they don't show the options for change to station / ship either.

Let's start by verifying that changing grid types is enabled. Please navigate to the Load Game screen, select your save, select Edit Settings and then Advanced Settings. Scroll down to the Misc section and check if you have Allow Convert to Station setting enabled.
It is also possible that small bits of voxel are present in your ship, you can temporarily enable Creative Tools in the Admin screen and copy and paste the grid away from asteroids and see if this helps.
