Oxygen loss when logged out

I am on a multiplayer server. I have triple the amount of oxygen farms needed for each person. the oxygen farms are placed around the equator of the ship so at all times there is a minimum of 40 oxygen farms facing the sun. While I am logged in, I can see the oxygen increase in the tanks. However, when I log off for a couple of hours the oxygen percentage has dropped. Why does the oxygen only increase when I am logged in but decrease when I log out? Thank you and this game is awesome.
