GPU crash

Hello,
Getting a reasonably frequent GPU crash and not sure why from the log.
This might be a mod but I do get crashes with the base game. The attached log uses a lot of mods because that helps reproduce the problem faster. If there is a difference in the type of crash I get in the base game vs. modded, I'll need to ask some questions about where to look in the log to find that distinction.

It's failing to render the scene, perhaps you are out of video memory or need a driver update.
Mods that include high resolution uncompressed textures can quickly overwhelm the game.
Your Graphics Card is more then adequate so I would probably look for texture optimization mods or remove a mod or two that add very high resolution textures. Could also be shader mods. The function that is causing the crash seems to take in ambient occlusion so maybe turn that off and see if that fixes your crash. Maybe one of your mods that interferes with this feature is broken.

Thanks for the response Nybbl er, and apologies for being so slow to follow up, rl got it in the way of my gaming time! :(
I doubt the hardware is an issue, as you noticed, it's a GTX 1080, what it doesn't appear to catch is that there are 2 in SLI. I know that doesn't increase memory but as SE isn't too friendly with extreme resolutions or aspect ratios, it's only running in 1920x1200. The GPU processing power should blitz through and minimise any backlog in the memory.
Which leaves me confused, because the crashes don't seem to correspond with times you might expect the textures to be loaded (one e.g. I would anticipate is clicking on a modded block in the build menu, as the game renders the ghost behind the menu at that moment). Turning off ambient occlusion certainly helped a lot, just hasn't quite fixed it. Is there a way to monitor/check what resources specific things are drawing?
