Solved

Our server's SIM Speed has changed from 1.0 to 0.53 after the update. The server is vanilla / not modded.

I am sorry you are experiencing this issue. Unfortunately, I was not able to reproduce it.

Is this your own server? If so, can you please provide me with a save file so I can can test the sim speed there?

You can access your save files by typing %appdata% into your Windows search bar and you will be redirected to the hidden Roaming folder. After that just follow: \Roaming\SpaceEngineersDedicated\Saves.
Please zip the file and attach it here. If you are having difficulty attaching files you can optionally use Google Drive. When sharing a google drive link please make sure it is set to be downloadable by anyone with the link.

UPDATE: We removed all grids from the server and the SIM Speed is no only 0.63

It did fix the SIM speed problem. However the asteroids that contained ships are reset so our grids that were in asteroids are buried. We took down that world and created a new one in its place with a fresh start.
