Doors and cockpit intermittently stop working
I have created several new ships, both of which required fastening to an existing grid to create because the landing gear does not snap to a platform grid when created as a new grid. This forces me to use structural blocks to link the platform to the ship to build the blueprints and weld them together.
After the ship was disconnected and given a new name, the F command stops working on the new grid when the player exits either the cockpit or the control seat. This includes entering and exiting the cockpit, opening and closing doors, interacting with cargo containers, docking ports, or conveyor junctions, or anything else requiring the use of the F command.
To fix the issue, the player has to save the game, exit to the main menu, and reload the game before the grid will allow interactions again.
Not every grid is impacted by this issue. I have never seen this with the Sledge or the Miner that were created already in the game. Also on the ship with the rotating drill head, the grid containing the rotor head and drills do not seem to have this issue.
I have the same bug
Attached is a video demonstrating the issue. I am currently working on welding up a new ship, and during a welding cycle I suddenly stopped being able to access the mining ship or several ports on the larger vessel.
I was clued into the issue because welding suddenly also stopped working.

Had the same issue before, and today while grinding down a ship.
At times I could not access the second ship into which I put my inventory, not even grinding it if I tried! Flying back to my base nearby I could access the cargo and empty my backpack then fly back to grind, then when I went to the secondary ship again I still could not access it.
I had to quit and reload in order to be able to access it again.

Yeah, I ran into this also last night, wanted to duplicate it again before I dumped a bug report, so glad to see this.
In my case, I had a grid (ship) and wanted to make a second smaller ship that would piggy-back on the first. The original ship in this case is: https://steamcommunity.com/sharedfiles/filedetails/?id=3707142225
I created a new small connector on the top of the original ship and then hit J to create a new grid. Placed a second small connector above the one I'd added in step 1, and then built both of those fully functional. Connected the two so they're anchored, and then built the rest of the small mining ship. When it was done (basically drill, cockpit, gyros, batteries and thrusters) and fully welded, I went back to the cockpit on the larger ship. I could not interact with it or enter it. I could only enter the newly created cockpit.
I tried power on and off both cockpits, disconnecting the two grids, etc, but I couldn't interact with the original cockpit. It eventually recovered, though I don't recall if I had to exit and relog (I think so), or if it cleared after a while.

To be clear, when this happen to me, most of the time I cannot interact with the full grid, no F, no grinding either.
I can interact with a sub-grid (drilling/grinding/welding tool head on a rotor) to deposit the items I have, but not in the ship itself, for example.
Yesterday in was on my base, which is a ship, a mobile base. I could not interact with a specific connector not the conveyor connected to, but I could fill up in the med bay nearby...

New information...
When I could not interact with a cockpit, I was painting and discovered the paint gun won't notice the cockpit, paints strait through.
My target is the white dot, here in the yellow square.
The painted item is one of the red blocks behind, which is now black. Here pointed by the arrow.
Note as well that the white cockpit does not have the block hollow around the target, which is usual for painting, as my current color is black.
See the difference here on another part of the same grid..
