With VS 1.2 the new flight mechanics feel awful, the ship continues to roll for seconds after I stopped pressing either "Q" or "E". I can't aim the ship effectively using the new flight mechaincs, I took the Red ship and was going to do the classic splitting of the Blue ship, after several failed attempts, I closed the game in frustration. SE1 never controlled like this and I'm personally not a fan of this control method. I preferred what SE2 launched with, either give it back or make it an optional setting! I don't even feel like I can play the game now because I can't effectively control the ship, it's either too sensitive or not sensitive enough. Light ships move like greased lightning while the large ones are just awful to move in any direction but straight.

When rotating with 'Q' and 'E' the rotational dampening is not acting fast enough.

same, but i don't think it's the dampener. if you rotate the ship via arrow keys it also makes a minimum of 5deg turn, even if you only tap the key. so i think its the target based system what has no visual feedback for rotation. it is also to aggressive for small adjustments. and its gets jiggly in the 45deg range.

This is intended behaviour. Rolling was smoothened in Space Engineers 2 compared to Space Engineers 1 as it felt too mechanical. As such, the delay effect was added to address that.
