Just throwing some ideas out here, inspired by other games and media.
Bioluminescent plants, on the surface and underwater. Think Avatar. Could make for a beautiful and compelling setting to explore and build in.
Pools of inverted 'water' which propel players and vehicles/blocks up, like the shulkers' levitation effect in Minecraft.
Giant willow tree-like mushrooms with long fronds.
Dark creepy craggy areas with stalactites and a generally ominous vibe.
Waterfalls (if not already planned) and cliffs. Canyons.
Giant crystalline 'natural' formations of various shapes.

Some firefly's/lighting bugs in the image above would be cool if some of the flora pulsated with a soft glow of light.
Adding some lava that flows if one digs into a mountain far enough.
