Allow Item Sorter to Function in both directions

Suggesting that Sorters should at least have a directionality toggle setting; if not filters for both directions.
The reason being that 2.5m conveyors are spaced out by 2.5m, and are awkward enough as is; and especially for designing docking connections. Having to place parallel sorters, and connecting pipes before and after them, uses up a lot of space; and is awkward to place behind docking connections. having 2-way functionality, makes using them for docking management far more practical; and a huge QOL improvement.
