Game Randomly Crashes (GPU Crash Possibly)

The game randomly crashes on the most recent version (hotfix) and it is game breaking for me. I believe it is a GPU crash based on a quick read of the logs and the display flickering. It seems indepedant of graphics settings.. crashed on various settings and resolutions.
I have the most recent AMD driver for my gpu (version list below). I reinstalled the game, restarted my pc, started a new save and game still crashes randomly. I have an AMD GPU and an HDR display. Crash can happen within minutes or after an hour, very random even on the lowest settings.
