Thruster Speed Throttling & Overclocking

It's always been a minor annoyance in SE1 that you couldn't set a speed limit for how fast thrusters would be able to propel you when piloted, like you can for wheels. Although this gripe mainly only applies when you raise the global grid speed caps with mods, it was still something that kinda bothered me, even in pure vanilla. Yes, you could turn inertia dampeners off and coast, but that only really applies while in space if you're traveling in a single direction with no variation.

With SE2 having a FAR higher grid speed cap, I think it might be a good idea to add a slider to cockpits/remote controls to allow you to set your ship's speed cap. How it'd work is pretty simple; while the cockpit with a throttled speed cap is being controlled, the thrusters will not propel the ship if it would exceed the speed cap in their given direction.

Yeah, you could just say "uhh, skill issue! just manually stop yourself from flying so fast!", but Space Engineers isn't really designed to be a test of mechanical skill, rather a cognitive test of your engineering and problem-solving skills, so "just git gud" isn't really a valid counterargument.

Additionally, having a manual throttle on each thruster would also be really helpful. Having big thrusters looks really cool, but it can make it hard to balance the thrust of your ship, which leads to your ship handling really poorly; setting thrusters to only output a percentage of their maximum output can help alleviate that. I can also envision scenarios where saving on power load by throttling your thrusters could be very helpful.

It's wishful thinking, but I'd also like that idea to go in the other direction; letting you "overclock" your thrusters and allow them to produce even more thrust than normal, at the cost of increased power/fuel consumption or something. It makes your ship easier to aesthetically design, since you don't need a bunch of thrusters in a given direction; just one or two that's overclocked.
