Audio sliders cannot be adjusted.
Solved
On the options menu > audio > audio options: music, sound, voice chat, microphone sensitivity cannot be adjusted. While there are native functions to PlayStation to adjust the volume it is usually going to affect other audio. I simply want to turn down the music so I can hear my friends

May I ask which device do you use (Controller/Mouse&Keyboard). On a controller it takes a moment for sliders to start moving, you need to hold D-pad in desired direction for a moment to move with a slider.
Please let us know if it was the issue, if not, any additional info will be appreciated.

Yes, it was the controller. I just tried to hold it and then it worked. Feel free to close this ticket but I do think it might be best to incorporate a single press of the d-pad, for people who just want to slightly adjust the settings.
